Instructions

  1. Preheat grill or grill pan to medium-high heat. Slice zucchini and yellow squash into 1/4-inch thick rounds. Brush lightly with olive oil, sprinkle with salt and pepper, and grill about 3 minutes per side until tender with char marks. Set aside to cool for about 10 minutes.
  2. In a bowl, combine 4 ounces crumbled feta cheese with 1 tablespoon olive oil and 1 teaspoon honey. Whisk or mix until smooth and creamy. Transfer to a small ramekin for serving.
  3. Slice cheddar or gouda into thin slices or small cubes. Portion goat cheese into small rounds if using. Arrange cheeses on serving board with space between.
  4. Cube 1 cup seedless watermelon, halve about 10 cherry tomatoes, and slice half a cucumber into thin rounds. Arrange fresh produce in clusters around the board, alternating with grilled veggies.
  5. Fill small bowls with mixed nuts and pickled jalapeños. Arrange artisan crackers in a small stack or fan shape on the board.
  6. If using, lay out prosciutto slices or grilled chicken skewers on a side plate or directly on the board if space allows.
  7. Scatter fresh basil or mint leaves over the spread. Place lemon wedges on the side. Drizzle a little extra honey over the whipped feta just before serving.
