A quick and easy grilled flatbread pizza recipe perfect for a cozy date night, featuring a crispy, smoky crust and melty cheese with fresh toppings.

  • 2 store-bought flatbreads (whole wheat or garlic-infused preferred)
  • Olive oil (extra virgin) for brushing
  • Mozzarella cheese, shredded or sliced fresh
  • ½ cup tomato sauce (pizza or marinara sauce)
  • Fresh basil leaves, a handful
  • Cherry tomatoes, halved (optional)
  • Red onion, thinly sliced
  • Crushed red pepper flakes, to taste
  • Salt and freshly ground black pepper, to taste
  • Optional toppings: sliced mushrooms (balsamic-marinated recommended), olives, arugula, cooked chicken pieces

Instructions

  1. Preheat the grill to medium-high heat, about 375-400°F (190-200°C). If using charcoal, spread coals evenly for consistent heat. This takes about 10 minutes.
  2. While the grill heats, slice cherry tomatoes, thinly slice red onion, tear fresh basil leaves, and shred or slice mozzarella cheese if needed.
  3. Lightly brush both sides of each flatbread with olive oil to prevent sticking and help crisp the crust.
  4. Place flatbreads directly on the grill grates. Grill for 2-3 minutes per side until grill marks appear and crust starts to crisp but remains pliable. Flip carefully with tongs.
  5. Remove flatbreads from grill briefly. Spread about 2 tablespoons (30 ml) of tomato sauce evenly on each flatbread. Add mozzarella, cherry tomatoes, red onion slices, and season with salt and pepper.
  6. Return topped flatbreads to the grill, cover with grill lid if possible. Grill another 3-5 minutes until cheese melts and toppings warm through. Cheese should be bubbly but not burnt.
  7. Remove pizzas from grill. Scatter fresh basil leaves on top and sprinkle crushed red pepper flakes if desired. Let rest for a minute to help cheese set and ease slicing.
  8. Slice each flatbread into halves or quarters and serve immediately, optionally with a fresh salad or grilled vegetables.

Brush flatbreads with olive oil to prevent sticking and add flavor. Keep grill at medium-high heat to avoid burning. Cover grill lid to melt cheese evenly. Pre-cook heavier toppings like chicken or mushrooms. If cheese melts too slowly, lower heat or move pizza to cooler grill area. Leftovers store up to 2 days refrigerated; reheat under broiler or in skillet for best crust.
