These Perfect Grilled Peach and Burrata Skewers are a quick and easy summer appetizer that combines warm, caramelized peaches with cool, creamy burrata, finished with a drizzle of balsamic and fresh basil. Ready in under 15 minutes, they’re perfect for impressing guests without stress.

  • 4 ripe but firm peaches
  • 2 balls of fresh burrata cheese (about 8 ounces total)
  • 1216 fresh basil leaves
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Flaky sea salt (like Maldon)
  • Freshly cracked black pepper
  • Wooden or metal skewers (if using wooden, soak in water for 30 minutes)
  • 2 tablespoons honey or balsamic glaze (optional)
  • 1 tablespoon chopped fresh mint (optional)

Instructions

  1. Preheat your grill to medium-high heat (about 400°F or 200°C). If using a charcoal grill, wait until the coals are covered with white ash. For gas grills, let it heat for about 10 minutes with the lid closed. Clean and oil the grate.
  2. Wash and dry the peaches. Cut each peach in half, remove the pit, then slice each half into 3-4 wedges (about 1-inch thick at the widest part).
  3. Gently pat the burrata dry with a paper towel. Cut each ball into 6-8 pieces, roughly the same size as the peach wedges. Keep burrata cold until ready to assemble.
  4. Thread a peach wedge onto a skewer, followed by a piece of burrata, then a basil leaf. Repeat until the skewer is full, ending with a peach wedge. Fit 3-4 pieces per skewer, leaving a little space between each.
  5. Brush the assembled skewers lightly with olive oil on both sides. Sprinkle with a pinch of flaky sea salt and a few cracks of black pepper.
  6. Place the skewers on the preheated grill. Cook for 2-3 minutes per side, or until the peaches have nice grill marks and are slightly softened. The burrata should be warm on the outside but still creamy in the center.
  7. Transfer the grilled skewers to a serving platter. Drizzle with balsamic vinegar or balsamic glaze, and a little more olive oil if desired. Add a final sprinkle of flaky salt and some fresh basil or mint leaves. Serve immediately.

Notes

Don’t over-grill the peaches; 2-3 minutes per side is perfect. Keep burrata cold until the last minute to prevent it from melting off the skewer. Use a clean, oiled grill grate to prevent sticking. Have all other dishes ready before grilling, as skewers are best served immediately. Don’t skip the final sprinkle of flaky salt—it balances the sweetness and richness.
