  • For the coating: ½ cup finely chopped pecans, ¼ cup everything bagel seasoning, ¼ cup finely chopped fresh chives, or ¼ cup crushed pretzels (choose one or mix two)
  • For the football laces: thin strips of chive, thinly sliced green onion tops, or small pretzel sticks cut into thin strips

Instructions

  1. Soften the cream cheese. Take the cream cheese out of the fridge about 30 minutes before you start. It should be soft enough that you can press into it easily with your finger. If you forgot to plan ahead, microwave it in 10-second bursts at 50% power, checking after each burst until it’s soft but not warm.
  2. Mix the base. In a medium mixing bowl, combine the softened cream cheese, shredded cheddar, sour cream, Worcestershire sauce, garlic powder, onion powder, smoked paprika (if using), salt, and pepper. Beat with a hand mixer on medium speed until smooth and fully combined—about 1-2 minutes. Scrape down the sides with your spatula. If you’re mixing by hand, stir vigorously until everything is evenly incorporated and no streaks of cream cheese remain.
  3. Taste and adjust. This is important. Take a tiny taste (on a clean spoon) and adjust seasonings. Need more salt? Add a pinch. Want more tang? Another splash of Worcestershire. This is your chance to make it perfect before shaping.
  4. Chill the mixture. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours. This step is non-negotiable—the mixture needs to be firm enough to shape into footballs without sticking to your hands.
  5. Prepare your coating. While the mixture chills, set up your coating. Spread your chosen coating (pecans, everything seasoning, chives, or pretzels) in a shallow dish or on a plate. If you’re using two coatings, set them up in separate dishes.
  6. Shape the footballs. Line a baking sheet or large plate with parchment paper. Scoop about 1 tablespoon of the chilled cheese mixture (I use a small cookie scoop for consistency). Roll it between your palms to form a ball, then gently shape it into an oval—slightly pointed at the ends, like a mini football. Place it on the parchment. Repeat with the remaining mixture. You should get about 18-20 mini footballs.
  7. Add the coating. Working one at a time, roll each shaped football in your coating of choice. Press gently so the coating sticks, but don’t smash the shape. Place the coated footballs back on the parchment. If you’re using two different coatings, keep them separate on the sheet so you know which is which.
  8. Create the laces. Using your thin strips of chive, green onion, or pretzel, create the classic football laces. You want two parallel lines down the center of each football, with 3-4 small cross-strips. This step is purely decorative but makes them instantly recognizable.
  9. Final chill. Refrigerate the shaped, coated footballs for another 15-20 minutes before serving. This helps them hold their shape on the platter. If you’re making them ahead, cover loosely with plastic wrap and refrigerate for up to 24 hours.
  10. Serve. Arrange on a platter with crackers, pretzel crisps, sliced baguette, or veggie sticks. Watch them disappear.

Don’t skip the chill time—it’s essential for shaping. For a nut-free version, use everything seasoning, chives, or crushed pretzels. These taste even better the next day as flavors meld.
