  • 1/4 cup (28 g) shredded sharp cheddar cheese (or Monterey Jack, mozzarella)
  • Pinch of salt, to taste
  • Freshly cracked black pepper, to taste
  • 1 teaspoon butter or oil (optional)
  • Optional mix-ins: chopped fresh chives, diced tomatoes, cooked bacon bits

Instructions

  1. Crack 2 large eggs into a microwave-safe mug.
  2. Add 2 tablespoons (30 ml) of milk, a pinch of salt, and freshly cracked black pepper.
  3. Beat everything together with a fork until smooth and slightly frothy (about 1 minute).
  4. Stir in 1/4 cup (28 g) shredded cheddar cheese and optional 1 teaspoon butter.
  5. Microwave on high for 30 seconds.
  6. Remove and stir gently to scramble evenly.
  7. Microwave again for 30 seconds and stir.
  8. If needed, microwave in additional 15-second bursts until eggs are set but still moist (total cook time about 1.5 to 2 minutes).
  9. Check that eggs look fluffy and slightly glossy but not wet or runny.
  10. Optionally sprinkle fresh chives, diced tomatoes, or cooked bacon bits on top.
  11. Let cool for 30 seconds before eating.

Notes

Use a ceramic or glass mug to prevent overflow and ensure even cooking. Stir midway to avoid rubbery edges. Eggs continue cooking after microwaving, so remove when slightly underdone. Adjust microwave times based on your appliance’s power. Optional add-ins like herbs, veggies, or meats can customize flavor.
