Quick Creamy Garlic Butter Shrimp Pasta

A fast and comforting shrimp pasta cooked gently in a creamy garlic butter sauce, ready in about 20 minutes. Perfect for busy weeknights or cozy dinners.

  • 1 pound (450g) large shrimp, peeled and deveined
  • 8 ounces (225g) fettuccine or linguine pasta (gluten-free pasta works too)
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup (240ml) heavy cream
  • 3/4 cup (75g) freshly grated Parmesan cheese
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons finely chopped fresh parsley
  • Salt and pepper to taste
  • Red pepper flakes, optional pinch

Instructions

  1. Bring a large pot of salted water to a boil. Add 8 ounces of fettuccine and cook according to package instructions until al dente (usually 9-11 minutes). Reserve 1/2 cup (120 ml) of pasta water, then drain the pasta and set aside.
  2. While pasta cooks, pat dry 1 pound of large shrimp. Season lightly with salt and pepper.
  3. In a large skillet over medium heat, melt 4 tablespoons of unsalted butter. Add 4 cloves of minced garlic and sauté for 1-2 minutes until fragrant but not browned.
  4. Add the shrimp directly to the skillet with the garlic butter. Cook for 2 minutes on one side, then gently flip and pour in 1 cup (240 ml) heavy cream. Reduce heat to low and simmer for 3-4 minutes, stirring occasionally until shrimp turn pink and opaque. If sauce gets too thick, stir in reserved pasta water a tablespoon at a time.
  5. Stir 3/4 cup (75g) freshly grated Parmesan cheese into the sauce. Then toss in the drained pasta, mixing well to coat every strand.
  6. Remove the skillet from heat. Stir in 1 tablespoon fresh lemon juice and 2 tablespoons chopped parsley. Season with salt, pepper, and optional red pepper flakes to taste.
  7. Serve immediately, garnished with extra parsley or Parmesan if desired.

Notes

Cook shrimp gently in the sauce over low heat to keep them tender and avoid rubberiness. Reserve pasta water to adjust sauce consistency. Use fresh lemon juice at the end to brighten flavors. For dairy-free, substitute butter with olive oil and heavy cream with full-fat coconut milk. Frozen shrimp can be used if thawed and patted dry.
