Quick Romantic Fresh Peach Bellini for Two

A quick, fresh, and romantic peach Bellini cocktail made with fresh peach puree and prosecco, perfect for sharing with someone special.

  • 2 medium ripe peaches, peeled and pitted
  • 1 bottle (750 ml) prosecco, chilled
  • 12 tablespoons simple syrup (or honey as alternative), adjust to taste
  • 1 teaspoon fresh lemon juice
  • Ice cubes (optional, for chilling peach puree)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Peel and pit 2 medium ripe peaches. To peel easily, blanch them in boiling water for 30 seconds, then plunge into ice water.
  2. Place peeled peaches in a blender or food processor. Add 1 teaspoon fresh lemon juice and 1-2 tablespoons simple syrup. Blend until smooth but still slightly pulpy. Optionally strain through a fine mesh sieve for a silkier texture.
  3. Chill the peach puree in the refrigerator for at least 10 minutes. Alternatively, add a few ice cubes to the puree and stir gently, then remove ice before mixing.
  4. Divide the chilled peach puree evenly between two champagne flutes (about 3 ounces or 90 ml per glass). Slowly pour chilled prosecco (about 4-5 ounces or 120-150 ml per glass) over the puree, pouring gently to preserve bubbles.
  5. Garnish each glass with a fresh mint leaf or a thin peach slice on the rim. Serve immediately.

Notes

Use ripe but firm peaches for best flavor and texture. Chill all ingredients well to preserve bubbles. Pour prosecco slowly at an angle to avoid foam overflow. Simple syrup amount can be adjusted to taste or replaced with honey or other sweeteners. Frozen peaches can be used if fresh are unavailable, but thaw and drain excess liquid first. Store leftover peach puree in an airtight container in the fridge for up to 2 days; do not mix with prosecco until serving.
