Refreshing Elderflower Lemonade Spritzer

A quick and easy mocktail combining floral elderflower cordial with fresh lemon juice and sparkling water for a bright, bubbly refreshment perfect for any occasion.

Ingredients

  • 1/4 cup (60 ml) elderflower cordial
  • 1/2 cup (120 ml) fresh lemon juice
  • 2 cups (480 ml) sparkling water
  • Ice cubes, plenty
  • A handful of fresh mint leaves
  • Lemon slices or wedges, thinly sliced
  • Optional: 1 teaspoon honey or agave syrup for sweetness

Instructions

  1. Chill sparkling water and elderflower cordial in the fridge for at least 60 minutes.
  2. Roll lemons on countertop, cut and squeeze to collect 1/2 cup (120 ml) fresh lemon juice; strain to remove seeds if needed.
  3. In a pitcher, combine elderflower cordial and fresh lemon juice; stir gently to blend.
  4. Slowly pour 2 cups (480 ml) sparkling water into the pitcher; stir gently to combine without losing fizz.
  5. Wash fresh mint leaves and lemon slices; lightly bruise mint by clapping between hands to release aroma.
  6. Fill glasses halfway with ice cubes, pour spritzer mixture over ice, and garnish with a sprig of mint and a lemon slice.
  7. Taste and adjust sweetness by adding a teaspoon of honey or agave syrup if desired; stir gently until dissolved. If too sweet, add more sparkling water.

Notes

Pour sparkling water slowly over the back of a spoon to keep bubbles intact. Stir gently to preserve fizz. Use fresh lemon juice for best flavor. Store lemon juice and elderflower cordial mixture refrigerated up to 3 days; add sparkling water and ice just before serving. Leftovers with sparkling water added should be consumed immediately as fizz fades quickly.
