Refreshing Watermelon Mint Slushie with Tajín Rim

A quick and easy icy summer drink combining sweet watermelon, fresh mint, lime juice, and a tangy Tajín salt rim for a refreshing treat.

Ingredients

  • 4 cups (about 600g) cubed, seedless watermelon
  • 1012 fresh mint leaves, gently bruised
  • Juice of 1 large lime (about 2 tablespoons or 30ml)
  • Tajín seasoning for rim and a pinch inside the slushie
  • 1 to cups (240-360ml) ice cubes
  • 1 tablespoon (15ml) simple syrup or honey (optional)

Instructions

  1. Rub a lime wedge along the rims of your glasses.
  2. Pour Tajín seasoning onto a shallow plate and dip the rims in to coat evenly. Set aside.
  3. Gently bruise the fresh mint leaves by pressing between palms or using a muddler to release oils without tearing.
  4. In a blender, combine watermelon cubes, bruised mint leaves, lime juice, ice cubes, and optional sweetener.
  5. Pulse a few times to break down ice, then blend on high for 30-45 seconds until smooth but still icy.
  6. Taste and adjust sweetness or thickness by adding more sweetener or a splash of cold/sparkling water if needed.
  7. Pour the slushie into prepared glasses carefully to avoid disturbing the Tajín rim.
  8. Garnish with a sprig of fresh mint or a thin watermelon wedge if desired and serve immediately.

Notes

Use Tajín Clásico for authentic flavor. Freeze watermelon cubes ahead for better texture if no high-powered blender is available. Avoid over-blending mint to prevent bitterness. Prepare rims first and let dry slightly to prevent Tajín from sliding off. Adjust ice quantity for preferred slush thickness. For a non-alcoholic fizz, add a splash of sparkling water.
