  • 8 slices regular sliced bacon
  • 1 tablespoon brown sugar
  • 2 large yellow onions, thinly sliced
  • 2 tablespoons unsalted butter or olive oil
  • Salt and pepper to taste
  • Optional toppings: mustard, ketchup, chopped fresh parsley

Instructions

  1. Peel and thinly slice 2 large yellow onions. Heat 2 tablespoons of unsalted butter or olive oil in a skillet over medium-low heat.
  2. Add the sliced onions to the pan. Stir occasionally for 20-25 minutes, seasoning lightly with salt and pepper. The onions should become soft, golden, and sweetly fragrant. If they start sticking, add a splash of water and scrape the pan gently.
  3. While the onions cook, lay out 8 slices of bacon on a plate. Sprinkle about 1 tablespoon of brown sugar evenly over each slice. Use a basting brush or your fingers to press the sugar gently into the bacon.
  4. Take 8 hot dogs and wrap each one tightly with a brown sugar-coated bacon slice. Be sure the ends of the bacon are tucked underneath to prevent unraveling during cooking.
  5. Heat your skillet over medium heat. Place the wrapped hot dogs seam-side down and cook for about 5-7 minutes, turning occasionally to crisp all sides. The bacon should be caramelized and the hot dogs heated through.
  6. Nestle the caramelized onions on top of the hot dogs or spoon them on the side. Add your favorite condiments like mustard or ketchup if desired.
  7. Garnish with chopped parsley or a pinch of freshly cracked black pepper for an extra pop of flavor.

Notes

If the bacon crisps too quickly before the hot dogs are heated through, lower the heat and cover the pan briefly to allow even cooking. Use toothpicks to secure bacon if needed and remove before serving. Keep an eye on the brown sugar to prevent burning. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated gently in a skillet to keep bacon crispy.
