Slow Cooker Red Wine Beef Stew

A cozy and easy slow cooker beef stew with red wine and root vegetables, perfect for chilly evenings and busy days. Tender beef melts into a rich, wine-laden broth with earthy carrots, parsnips, and turnips.

  • 2 pounds beef chuck roast, cut into 1-inch cubes
  • 1 ½ cups dry red wine (Merlot or Cabernet Sauvignon)
  • 2 cups low sodium beef broth
  • 3 medium carrots, peeled and cut into chunks
  • 2 medium parsnips, peeled and chopped
  • 1 large turnip, peeled and diced (optional)
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • ¼ cup all-purpose flour (or cornstarch/arrowroot powder for gluten-free)
  • 2 tablespoons olive oil
  • 34 sprigs fresh thyme
  • 2 bay leaves
  • Salt and black pepper to taste

Instructions

  1. Pat the beef cubes dry with paper towels. Season generously with salt and pepper. Dredge the meat in all-purpose flour, shaking off excess. (About 10 minutes)
  2. Heat olive oil in a large skillet over medium-high heat. Brown the beef cubes in batches for 3-4 minutes per batch until deeply caramelized. Transfer browned beef to the slow cooker. (15 minutes)
  3. In the same skillet, sauté diced onions over medium heat until translucent, about 5 minutes. Add minced garlic and cook for 30 seconds. Stir in tomato paste and cook for 1-2 minutes. (7 minutes)
  4. Pour in the red wine and scrape browned bits from the pan. Let simmer for 3-4 minutes to reduce slightly. (5 minutes)
  5. Pour the wine mixture over the beef in the slow cooker. Add beef broth, carrots, parsnips, turnips, thyme sprigs, and bay leaves. Stir gently to combine. (5 minutes)
  6. Cover and cook on low for 7-8 hours or on high for 4-5 hours until beef is fork-tender and vegetables are soft but not mushy.
  7. Remove thyme sprigs and bay leaves. Adjust salt and pepper to taste. If stew is too thin, mix 1 tablespoon flour with 2 tablespoons cold water and stir into stew. Cook on high for another 15-20 minutes to thicken. (5-10 minutes)

Notes

Do not skip browning the beef for best flavor. Use a dry red wine you enjoy drinking. Adjust seasoning at the end. For gluten-free, substitute flour with cornstarch or arrowroot powder. The stew tastes better the next day. Can be cooked in a Dutch oven on stovetop or oven if no slow cooker is available.
