This Spooky Witches Brew Green Punch with Dry Ice is the kind of recipe that makes people stop and stare. It’s dramatic without being difficult, sweet without being cloying, and the centerpiece of any Halloween party.

Ingredients

Scale
  • 1 gallon pineapple juice (not from concentrate if possible)
  • 1 can (12 oz) frozen lemonade concentrate, thawed
  • 1 liter Sprite or 7-Up
  • 2 quarts lime sherbet (bright green, not pale)
  • 1 cup water
  • 23 pounds food-grade dry ice
  • Optional: 3-4 drops neon green gel food coloring
  • Optional: Gummy worms or plastic spiders for garnish

Instructions

  1. Mix the base: In a large pitcher, combine the gallon of pineapple juice, the thawed lemonade concentrate, and 1 cup of water. Stir until the concentrate is fully dissolved. This can sit in the fridge for up to 24 hours.
  2. Chill everything: Put the Sprite and the lime sherbet in the fridge at least 2 hours before serving. Everything needs to be very cold.
  3. Assemble the punch: Pour the chilled pineapple-lemonade base into your punch bowl. Slowly pour in the Sprite. Stir gently—you don’t want to lose all the carbonation.
  4. Add the sherbet: Scoop the lime sherbet into the punch bowl in large dollops. Don’t stir it in completely. Let it float and melt slowly.
  5. Prepare the dry ice: Put on thick kitchen gloves or use tongs. If your dry ice comes in a large block, wrap it in a towel and gently tap it with a hammer to break it into smaller chunks—about 2-3 inches each. Do this over a cutting board.
  6. Add the dry ice: Using tongs, carefully drop 2-3 chunks of dry ice into the punch bowl. Do not touch the dry ice with your bare skin.
  7. Let it fog: Wait 2-3 minutes for the fog to build up and spill over the edges of the bowl. Dim the lights for maximum effect.
  8. Serve carefully: Ladle the punch into cups, making sure no pieces of dry ice end up in anyone’s glass. Warn guests not to eat or drink the dry ice pieces.

Notes

Dry ice safety is non-negotiable. Never put dry ice in a closed container. Never touch dry ice with bare skin. Never swallow dry ice. Always use an open punch bowl. Warn guests not to consume dry ice pieces. The fog effect lasts about 15-20 minutes per chunk; add more chunks as needed. For best results, chill all ingredients and the punch bowl before assembling. The punch base can be made up to 24 hours ahead.
