  • 2 large ripe peaches, peeled and chopped
  • 3 tablespoons gelatin powder
  • 2 tablespoons honey
  • 3/4 cup (180 ml) water, divided
  • 1 teaspoon fresh lemon juice
  • Pinch of sea salt (optional)

Instructions

  1. Peel and chop 2 large ripe peaches. Set aside about 3/4 cup (180 ml) of the chopped peaches.
  2. In a blender or food processor, combine the chopped peaches with 1/4 cup (60 ml) of water. Blend until smooth.
  3. In a small bowl, sprinkle 3 tablespoons of gelatin powder over 1/2 cup (120 ml) cold water. Let it sit for 5 minutes to bloom.
  4. Pour the peach puree into a small saucepan over low heat. Add 2 tablespoons honey, 1 teaspoon fresh lemon juice, and a pinch of sea salt. Stir gently until warm and combined without boiling.
  5. Remove the saucepan from heat and whisk in the bloomed gelatin until fully dissolved, about 1-2 minutes.
  6. Using a dropper or small spoon, carefully pour the mixture into gummy bear molds.
  7. Place the filled molds in the refrigerator for at least 2 hours until firm and springy.
  8. Gently pop the gummies out of the molds and store in an airtight container in the fridge for up to one week.

Notes

Bloom gelatin properly in cold water before adding to warm peach mixture. Keep heat low to preserve peach flavor and avoid bitterness. Use silicone molds for easy removal. Chill gummies for at least 2 hours for best texture. If mixture thickens too quickly, gently warm and whisk again. For vegan option, substitute gelatin with agar-agar powder but expect firmer texture.
