  • 4 cloves garlic, minced
  • 2 cups (480 ml) low sodium chicken broth
  • 2 teaspoons fresh thyme leaves (or 1 teaspoon dried)
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh parsley, chopped
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • Salt and freshly ground black pepper, to taste
  • Optional: pinch of red pepper flakes or substitute lemon juice with white wine

Instructions

  1. In a mixing bowl, combine 2 cups chicken broth, minced garlic, olive oil, lemon juice, thyme, rosemary, parsley, salt, and pepper. Stir well to blend the flavors.
  2. Pat the chicken breasts dry with paper towels. Lightly season both sides with salt and freshly ground black pepper.
  3. Place the chicken breasts in a single layer at the bottom of the slow cooker.
  4. Carefully pour the garlic herb broth mixture over the chicken, ensuring the breasts are mostly submerged.
  5. Cover and cook on low for 3 to 4 hours, or until the chicken reaches an internal temperature of 165°F (74°C). Avoid lifting the lid too often.
  6. Use a meat thermometer to check the thickest part of the chicken. If needed, cook an additional 15-30 minutes, but do not overcook.
  7. Let the chicken rest in the broth for 5 minutes after cooking to absorb the flavors.
  8. Use tongs to transfer the chicken to a plate and spoon some broth over the top before serving.

Notes

If the broth is thin after cooking, remove the chicken and simmer the liquid on high in a saucepan for 5 minutes to concentrate flavors and thicken slightly. Use a meat thermometer to avoid overcooking. Fresh herbs add more brightness than dried. Do not overcrowd the slow cooker for even cooking. Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months.
