  • 2 cups shredded Mexican blend cheese (or Monterey Jack and sharp cheddar)
  • 1 cup cooked seasoned ground beef or shredded chicken (seasoned with chili powder, cumin, garlic powder, smoked paprika)
  • 1 ½ cups guacamole (store-bought or homemade: 3 ripe avocados, juice of 1 lime, ¼ cup finely diced red onion, 1 minced garlic clove, handful chopped cilantro, salt to taste)
  • ½ cup sour cream (full-fat preferred)
  • ¼ cup pico de gallo or salsa (chunky red salsa)
  • ¼ cup black olives, sliced
  • ½ cup fresh cilantro, chopped
  • 1 jalapeño, sliced (seeds removed for less heat)
  • 1 cup cherry tomatoes, halved
  • ½ cup red onion, finely diced
  • ½ cup pickled jalapeños
  • ¼ cup cotija cheese or queso fresco, crumbled (optional)
  • Lime wedges (for serving)

Instructions

  1. Cook the protein: In a skillet over medium heat, cook 1 pound ground beef (or shredded chicken) until browned. Drain excess fat. Season with 1 tablespoon chili powder, 1 teaspoon cumin, 1 teaspoon garlic powder, 1 teaspoon smoked paprika, and salt to taste. Stir until fragrant, about 2 minutes. Set aside and keep warm.
  2. Prep the toppings: Halve cherry tomatoes, dice red onion, slice jalapeño, chop cilantro, and slice black olives. Place each in small bowls.
  3. Make the guacamole (if homemade): Mash 3 ripe avocados with juice of 1 lime, ¼ cup finely diced red onion, 1 minced garlic clove, a handful of chopped cilantro, and salt to taste. Cover with plastic wrap pressed onto surface to prevent browning.
  4. Assemble the board: Arrange tortilla chips in a large rectangle on a serving board or sheet pan, leaving space in the middle for guacamole and end zones. Spoon guacamole into the center and spread evenly to create a rectangular ‘grass’ patch. Place a bowl of pico de gallo or salsa at one end and a bowl of sour cream at the other for end zones.
