  • 4 pounds sweet potatoes (about 45 large potatoes)
  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar, packed
  • 2 large eggs, room temperature
  • 1/3 cup whole milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1 cup pecans, roughly chopped
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/4 cup unsalted butter, cold and cubed
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Preheat oven to 400°F (200°C). Wash and scrub sweet potatoes, prick with a fork, and roast on a baking sheet for 45-60 minutes until tender. Let cool until handleable.
  2. Peel cooled sweet potatoes and place in a large bowl. Add melted butter, brown sugar, eggs, milk, vanilla, salt, cinnamon, nutmeg, and ginger. Beat with a hand mixer until smooth and creamy, about 2-3 minutes.
  3. In a medium bowl, combine flour, brown sugar, cinnamon, and salt. Cut in cold cubed butter using a pastry cutter or fingers until mixture resembles coarse crumbs with pea-sized butter pieces. Stir in chopped pecans.
  4. Grease a 9×13-inch baking dish. Spread sweet potato mixture evenly in dish. Sprinkle pecan streusel over the top without pressing down.
  5. Bake immediately at 350°F (175°C) for 30-35 minutes until bubbly and golden, or cover and refrigerate for up to 3 days. If refrigerated, let sit at room temperature for 30 minutes, then bake covered for 20 minutes, uncover and bake for 15-20 more minutes.
  6. Let casserole rest for 10-15 minutes before serving.

Notes

Roast sweet potatoes instead of boiling to prevent a watery casserole. Toast pecans lightly for extra flavor. Let casserole rest after baking for cleaner servings. For make-ahead, cover tightly with foil before refrigerating.
