  • 3 medium ripe bananas (about 1 1/2 cups mashed)
  • 3/4 cup (150g) granulated sugar
  • 1/4 cup packed (50g) brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 3/4 cups (220g) all-purpose flour, sifted
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (170g) semi-sweet or bittersweet chocolate chips

Instructions

  1. Brown the butter: Place 1/2 cup unsalted butter in a medium saucepan over medium heat. Stir frequently as it melts and foams. When golden brown with nutty aroma and brown specks form, remove from heat and cool for 5 minutes.
  2. Preheat oven to 350°F (175°C) and grease or line a 9×5-inch loaf pan with parchment paper.
  3. Mash the bananas in a large bowl until smooth but slightly chunky (about 1 1/2 cups).
  4. Mix in granulated sugar and brown sugar into the mashed bananas. Whisk in eggs and vanilla extract until combined.
  5. Pour the cooled brown butter into the banana mixture and stir gently to combine.
  6. In a separate bowl, whisk together flour, baking soda, and salt.
  7. Add the dry ingredients to the wet ingredients in two parts, folding gently after each addition. Do not overmix; batter should be thick and a little lumpy.
  8. Fold in chocolate chips, reserving a few to sprinkle on top if desired.
  9. Pour batter into prepared loaf pan and smooth the top. Scatter reserved chocolate chips on top if using.
  10. Bake for 55–65 minutes. Check doneness at 55 minutes with a toothpick; it should come out with a few moist crumbs but no raw batter. If needed, bake 5-10 minutes longer, tenting with foil if top browns too quickly.
  11. Cool bread in pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Keep heat medium when browning butter and stir constantly to avoid burning. Use very ripe bananas for best sweetness and moisture. Fold dry ingredients gently to avoid tough bread. Toss chocolate chips in flour before folding in to prevent sinking. Let bread cool completely before slicing to set texture. For gluten-free, substitute all-purpose flour with gluten-free blend and add xanthan gum if needed. For dairy-free, use browned coconut oil instead of butter.
