Creamy High-Protein Cottage Cheese Chocolate Mousse

A rich, creamy, and deeply chocolatey mousse made with cottage cheese for a high-protein dessert that comes together in just 5 minutes. Perfect for late-night cravings or a post-dinner treat.

Ingredients

  • 1 cup (240g) full-fat cottage cheese
  • 3 tablespoons (18g) unsweetened cocoa powder
  • 23 tablespoons (30-45ml) maple syrup or honey
  • 1 teaspoon (5ml) vanilla extract
  • Pinch of sea salt
  • Optional: 2 tablespoons (30g) melted dark chocolate (70% or higher)
  • Optional: ¼ teaspoon espresso powder

Instructions

  1. Add cottage cheese to your blender. Do not drain.
  2. Add cocoa powder, sweetener, vanilla, and salt. If using espresso powder, add it now.
  3. Blend on high for 45-60 seconds, starting on low speed to avoid cocoa powder flying everywhere. Stop and scrape down the sides once if needed.
  4. Taste and adjust sweetness or chocolate flavor as desired.
  5. Blend again for 10 seconds if you added anything in the previous step.
  6. Transfer to serving dishes (small bowls, ramekins, or glasses). The mousse will be thin at this point.
  7. Chill for at least 30 minutes (2 hours for best texture).
  8. Optional: Top with whipped cream, fresh raspberries, flaky sea salt, or chocolate shavings before serving.

Notes

For the creamiest texture, use full-fat cottage cheese. Blend for a full minute to aerate the mixture. The mousse thickens significantly as it chills. Store in the refrigerator for up to 4 days. Can be frozen for up to 2 months.
