These mini football-shaped cheese ball bites are the perfect game day appetizer. Made with cream cheese, sharp cheddar, and a crunchy pecan coating, they come together in under 20 minutes and are always a crowd-pleaser.

  • 1 cup shredded sharp cheddar cheese (about 4 ounces)
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder (optional)
  • 1 teaspoon Worcestershire sauce
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper, freshly ground
  • ½ cup pecans, finely chopped
  • 2 tablespoons fresh chives, finely chopped
  • Pretzel sticks or crackers for serving

Instructions

  1. Soften the cream cheese: Take the cream cheese out of the fridge about 30 minutes before starting. If in a rush, microwave on 50% power in 10-second intervals until soft but not warm.
  2. Mix the base: In a medium mixing bowl, combine softened cream cheese, shredded cheddar, garlic powder, onion powder, Worcestershire sauce, salt, and pepper. Mix with a rubber spatula until completely uniform and no white streaks remain. Taste and adjust seasoning if needed.
  3. Chill the mixture: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes until firm.
  4. Prepare the coatings: While the mixture chills, finely chop the pecans. Toast them in a dry skillet over medium heat for 2-3 minutes, shaking frequently, until fragrant. Let cool completely. Finely chop the chives. Mix the pecans and chives together on a plate or shallow bowl.
  5. Shape the footballs: Line a baking sheet or plate with parchment paper. Using a small cookie scoop or teaspoon, scoop out portions of about 1 tablespoon each. Roll each portion into a ball, then gently shape into an oval (mini football shape) with slightly tapered ends. Place on the parchment-lined sheet.
  6. Add the coating: Roll each football in the pecan-chive mixture, pressing gently so the coating sticks. Place coated footballs back on the parchment sheet.
  7. Create the laces: Press two short lines of extra chopped chives on top of each football to mimic laces. Optionally, use a toothpick to create a seam line down the center before adding chives.
  8. Final chill: Refrigerate the finished cheese ball bites for at least 15 minutes before serving to firm up.

Notes

For best results, use full-fat cream cheese and shred your own cheddar from a block. Chill the mixture thoroughly before shaping. If hands get sticky, run them under cold water and dry before handling. The coating is best added just before serving to maintain crunch. These can be made up to 24 hours ahead without the coating.
