  • 1 tsp vanilla extract
  • Optional: 1/2 cup (60 g) chopped pecans or walnuts
  • Optional: 1/4 cup (40 g) chocolate chips
  • Optional: almond milk (to replace heavy cream for a lighter, dairy-free version)

Instructions

  1. Pour 2 cups (480 ml) of cold heavy whipping cream into a large mixing bowl. Using an electric hand mixer, beat on medium-high speed until soft peaks form, about 3 to 5 minutes. Be careful not to overbeat.
  2. In another bowl, combine 14 oz (395 g) sweetened condensed milk with 1/2 cup (120 ml) caramel sauce. Add 1 tsp sea salt and 1 tsp vanilla extract. Stir gently until smooth and glossy.
  3. Using a rubber spatula, fold about a third of the whipped cream into the caramel mixture to lighten it. Then fold in the remaining whipped cream gently, turning the bowl and scraping the sides to keep the mixture airy.
  4. If desired, fold in optional mix-ins like nuts or chocolate chips evenly throughout the mixture.
  5. Pour the mixture into a loaf pan or freezer-safe container. Smooth the top with a spatula and sprinkle a pinch of sea salt over it.
  6. Cover with a lid or plastic wrap and freeze for at least 6 hours, preferably overnight.
  7. Before serving, let the ice cream sit at room temperature for 5 minutes to soften for easier scooping.
